Epicurean Kentuckian: Hearty Beans and Rice



2009-04-21 - Photo by Pen. One last round of cold weather calls for one last hearty dish. This upscale beans and rice starts with part of a smoked sausage, browned and removed from the pan, then mirepoix (the holy trinity of carrot, onion and celery), then half a red pepper and 2 cloves of garlic. Add the sausage back, plus 2 cans of red kidney beans and thyme, salt and pepper to taste. Simmer for 15 minutes and serve over rice.

Just how many winters are there?

Is this Dogwood Winter we're in now?

Just how many winters are there before warm weather is here to stay?

I know of Redbud, Dogwood, and Blackberry, and have heard of Linen Britches which is just when you can start wearing short sleeves and linen pants.

I have also heard of Stump Winter, when you bring in the last bit of firewood and use up, but I just read on the Internet that there is a Whippoorwill winter, when the Whippoorwill migrated in for the summer.

These old folks' tales of winters get mighty interesting as I grow older.

CU Chorale, Handbell Choir to perform April 24, 2009

CAMPBELLSVILLE, KY - The Campbellsville University Chorale and Handbell Choir will perform at 8:00pmET/7:00pmCT, Friday, April 24, 2009, in The Gheens Recital Hall in the Gosser Fine Arts Center, 210 University Drive, Campbellsville. The public is invited to the free concert.

The chorale performs a wide variety of literature in a broad spectrum of musical styles, including accompanied and a cappella pieces and both sacred and secular selections, according to Dr. Tony Cunha, assistant professor of music and assistant dean of the School of Music, who directs the chorale.

Obituary: Linda Cooper, 68, Columbia, KY

Mrs. Cooper was a member of a respected South Adair County family. She was a member of Sparksville Baptis Church and had worked at Westlake Regional Hospital for 21 years

Linda Cooper, 68, 1964 Cane Valley Road, Columbia, Ky. passed away Monday, April 20, 2009 at 8:05am at Norton Audubon Hospital in Louisville, KY after an illness.

The funeral service is Thursday, April 23, 2009 at 2:00pmCT, at Stotts-Phelps-McQueary Funeral Home, 200 Greensburg ST, Columbia, KY, with Bro. Darrell Landis and Bro. Rickey Page the officiating clergy. Visitation will be after 3:00pmCT, Wednesday, April 22, 2009, at the funeral home. Interment will be in the McClister Cemetery at Fairplay, KY.

Charles Marshburn gets offer of ocean front property

About: Information wanted on growing tobacco

This is for Charles. When he gets his allotment, I have the perfect place for him to grow it. I have ten acres, of ocean front property, out here in Hardscratch. He is more then welcome to use this land. Out here, we plant out filters horizontally. This way, we have tobacco on the stalks, and tobacco on the roots, just like the taters and peanuts we grow.

Remington Huckaby wins at KCM in Lexington, KY

Taylor Burton and Jamison Staten also merit honors

Remington Addison Grace Huckaby, her older sister Taylor Burton, and Jamison Staten all of Columbia, KY, were winners April 17-19, 2009, in Lexington, KY.

Remington is seven months old and is the daughter of Rodney and Janet Huckaby.

Remington Huckaby won KY Cover Miss (KCM) Division Supreme at the organization's tri-state finals.

Judge Melton, AC PRIDE coordinators, send thanks

Judge Executive Ann Melton, PRIDE Coordinators A.L. Sinclair, Lisa Lee, and the Adair County Fiscal Court would like to extend a heartfelt thank you to everyone who helped in any way to make Saturday a huge success.

Working together, great things can be accomplished.

This was the biggest turnout in the history of the program. So far, we've confirmed there were 420 volunteers and that 1,200 bags of trash was picked up. We still have paper work which has not been turned in yet from groups who helped, and that will increase, perhaps substantially, the numbers.

Adair Co. Middle School Awards Day is April 23, 2009

Susan Minton will be the motivational speaker for the the Adair County Middle School Awards Day, which will be held Thursday, April 23, 2009, starting at 9:15amCT.

The event will honor students who scored Proficient and Distinguished on tests. ACMS Principal Alma Rich will deliver opening remarks.

Following the remarks of Susan Minton, drawings will be held for various prizes donated by individuals, businesses, and institutions in the area.

Students with Proficient and Distinguished scores will be released from 5th period for a field day/cookout. Adair County Middle School is located at 322 General John Adair Drive, Columbia, KY.

Graduation materials pick-up at ACHS, Friday
A representative from the Jostens Company will be at the Adair County High School Cafeteria, 526 Indian Drive, Columbia, KY, on Friday, April 24 during lunch, from approximately 10:30am to 12:00pm Noon CT, to deliver caps, gowns, and other items graduating seniors ordered from them. All types of alchohol taken during pregnancy can be harmful to fetus. A plea: Please don't drink if you are pregnant or if you may become pregnant.

Fetal Alcohol Syndrome (FAS) is 100% preventable unlike many other birth defects.

Fetal Alcohol Syndrome is a group of physical, behavioral, and cognitive abnormalities that can occur to unborn babies when pregnant women drink alcohol and pass the alcohol along to their unborn babies. FAS babies are identified by abnormal facial features, central nervous system problems, and slowness of growth.

When you drive through the square be sure to thank the Garden Club team members who are there every Thursday morning to tend the flower beds and pick up the litter.

Well, mother nature is still not wanting to cooperate w/ us and with all the calls we received on Monday from dedicated Dippers wanting potato soup, I reckon I better get to peelin', wouldn't you think?

Soooooo, with that being said, I'll ruin my manicure to peel, slice, dice and all that good stuff. Because I am a dedicated Dipper!

Thanks again for the awesome support our fellow Columbians have shown us during the winter months and continue to show us.

Note: We will be closing at 6:00pmCT on Tuesday, April 21, 2009, so that we can attend the Chamber Banquet. Thanks again!

Remember we are up and running 7 days a week now. Our evening hours will continue to extend as weather permits.

The Adair County Knife Club will be hosting a Knife Swap and Auction, the 1st and 3rd Tuesday nights of every month in the basement of the Columbia Masonic Lodge, located at the corner of Burkesville and Frazier Streets, Columbia, KY. Adair County 8th Grade Spring Football Practice
There will be 8th grade spring football practice for anyone interested in playing high school football next year at 3:01pm to 4:31pmCT, Tuesday, April 21, 2009; Wednesday, April 22, 2009; and Thursday, April 23, 2009, at the Adair County High School Football Field, located between ACHS, 526 Indian Drive, Columbia, KY, and the Columbia Western Bypass. These practices will allow 8th graders to get a taste of what high school football is about and get to know the coaches. hese practices are for 8th graders, who will be freshman next year only. Players are asked to bring shorts, t-shirt, and gym shoes.
