Reader wants recipe for Cornflake Pie

ColumbiaMagazine reader Debby Manning wrote to ask if we could share the recipe for Cornflake Pie. The pie pictured on our site was made by Teresa Powell from a recipe in the book Sweety Pies by Patty Pinner. (Click the link to purchase at Amazon)

We can't reprint that copyrighted recipe, but Cornflake Pie is also sometimes referred to as "Mock Pecan Pie," and you can take any standard pecan pie recipe and substitute cornflakes for pecans to get a similar result.

Letter: When Cumberland froze over at Defeated Creek

About Rivermen of the Cumberland: Chapter 5

Ed,

I am enjoying Rivermen of the Cumberland. The new episode is the part of the river I know most about -- from Carthage to Nashville. My father grew up not far from the river in Trousdale County and I live not more than ten miles south of the river. Last year (maybe two years ago) I went to a wedding, outside, near the water's edge at Defeated Creek Marina. In the year I was born, 1940, the Cumberland froze over. I believe I have heard the story of my father's driving across the ice between Carthage and Hartsville.

C-J story says KY 61 project in Adair County is killed

BLACK MONDAY

Adair County's economic development has been dealt a serious blow, according to a story by Tom Loftus in this morning's Courier-Journal online which says that the KY 61 Project from just south of the Louie B Nunn Parkway to Sparksville has been cut.The story, "Transportation Cabinet cuts Adair County highway project/Prather: There's not enough money for it" Note: The link is working today, Monday, September 22, 2008, but may not work in the future.

The construction was important to the success of the new Holladay Place Shopping Center, as it would have made travel to Columbia from points in Cumberland and Clinton Counties in Kentucky, and Clay, Fentress and Pickett Counties in Tennesssee much more attractive.
