Epicurean Kentuckian: Chef at work in EK lab kitchen

2010-03-14 - Photo by Pen. Epicurean Kentuckian Kitchen
Constant attention to detail makes any new cooking creation a hit. It's serious business, and sometimes a clandestine matter, as when one tries to get trade secrets from Chef Evan. Sometimes he'll let you know everything but "the secret ingredient," but most of the time, he's like his great grandmother Chelf on the Knifley, KY, side, who used exact recipes and procedures on all dishes, but when interrogated on how she made the World's Best Ever Thanksgiving dressing, she would say, "Oh, I don't know. I just add a little bit of this and a little bit of that." We don't have even the name of the yummy creation above, but when he made the main meal at his and Graham's "Plunkrock House" in Columbia, on March 7, 2010, and was asked what it was, he said, "Birthday Stew," in honor of the previous day's celebration. We're not at liberty to give out his recipe, but suffice it to say it will join "Funeral Cake," and Johnnietta Jessie's "Corn Breakfast," as a colloquial delight. Linda and I enjoyed leftover Birthday Stew all week; it was one of those soups which actually is better reheated. When she took the last bowl for her lunch work, I complained to the chef, that the Birthday Stew was for me, he said he'd come back to Columbia to make more. Not right now, he said. "I'm very busy." But someday, he said, he'll return to Adair County to make another kettle of the delicacy. -GRANDDAD And, by the way, "Epicurean Kentuckian," is not a place. It is a broad umbrella topic for special food, and home, picnic, tailgating, community and restaurant experiences.

Poet offers to let others finish work - or just enjoy

About: Let the Daffodil watch begin

Spring fills the cups of Daffodils
by M.E. Lewis
Spring is the season when the earth is re-born
Leaving behind old Winters scorn

A gentle rain falls over meadows and hills
Filling the cups of the Golden Daffodils

Little blades of grass seem to spring up from the ground
Tickling the feet of children
As they dance all around.
I wrote this poem about 20 years ago and I feel it is not finished. If someone out there wants to add to it go right ahead. -melewi

A sonnet by Robert Stone: Choices

Choices - a sonnet-
by Robert Stone
I thought I had a choice when I was young
and some young me decided what I did
and so became the me that now is sung,
the me from whom all other pasts are hid.

I think I have a choice this very day
and now will be deciding what I do
and so become the me that chose this way,
the me to whom some futures gave no clue.

I think I will have choices still to come
and me to be will claim decisions made
and so remain the me that hears the drum,
the me for whom there comes the last parade.

I hear no drummer but my own and so
no other times and pathways can I know.

- Robert Stone, 14 March 2010

Added Sanford Green to WWII PoW list

Thanks to Chris Bennett, we've added another name to our Adair County Veterans of WWII POW list. Chris writes:
Sanford Green of the Fairplay Community was a POW in World War II. Sanford was a friend of my grandfather, as a child. I think he was captured during the battle of the bulge.

During Sanford's life he chose not to tell folks about his ordeal, so I have never researched his story. After the war he moved to IL where he lived most of his life. He moved back to Fairplay when he retired and lived there until he died. Sanford was the definition of an American Hero and a fine Christian man. He paid a high price, so that people of Western Europe and beyond might live free from the rule of the Nazis.

The obligation one assumes when one accepts a book from a friend is magnified by at least a factor of two when one writes about that book. I know I have at least two readers, for a pair of those rare birds told me so. More than two have said so, but those two are known for their honesty.

Baby chicks time on the farm

These warm days here at Tallgrass Estates remind me of days on the farm. They mean it's time to start thinking about baby chickens for this year. I am thankful memories are not affected by macular degeneration.

In the uncertain economic times I grew up under, 1922-1940, our chickens were a life-saver. They were dependable when most things were NOT dependable. They were always there to provide food and cash flow for not only store-bought food and simple necessities but frivolities -- things like piano lessons or a package of lady-finger firecrackers for three kids or a box of Sun Maid raisins for the cornbread Thanksgiving dressing. Thanks to our chickens, Mom and Dad shielded us three Hinman kids from knowing the awful truth. We were dreadfully poor and one good rain away from joining the Okies on Highway 66 in search of a better life.

"Mama, you've got to see this," my grown daughter led me to a colorful booth at a craft fair in Nashville.

Right before my eyes were dozens of teepees. Not real ones made of hide, but ones made of fabric wrapped around five or six wooden poles. "Aren't they adorable?" She could see her four-year-old sitting inside, wearing his Toy Story cowboy hat and boots.
