Epicurean Kentuckian: Cola Bread

2022-02-04 - EK Kitchen - Photo by Pen.
When looking online for a recipe for soda bread, Amy happened upon an alternative that uses Cola-type soda and not baking soda, and decided to give it a try. Baking in the bundt pan, combined with the sugar from the soda, led to a really thick, crispy crust.

Cumberland, Green get grants to clean up illegal open dumps

By John Mura/Robin Hartman

Frankfort, KY - Gov. Andy Beshear and Kentucky Energy and Environment (EEC) Cabinet Secretary Rebecca Goodman today announced approximately $995,000 in grants for the cleanup of 80 illegal dumps in 18 counties across the commonwealth.

"Kentucky families deserve for their communities to be clean and safe. Illegal dump sites can affect Kentuckians' quality of life and property values through no fault of their own," Gov. Beshear said. "Thousands of our people will benefit from this grant program."

The following counties received grants: Anderson, Butler, Carter, Christian, Cumberland, Estill, Green, Harlan, Hart, Jackson, Johnson, Lawrence, Marion, Martin, Pike, Warren, Wolfe and Woodford.

As part of the grant funding, counties must agree to provide a 25 percent match of the grant amount. The EEC may waive the 25 percent match on any individual illegal open dump where cleanup costs exceed $50,000.

Letter: Driver identified, name should be released

James Roberts writes:
I read the article on the pursuit of the vehicle that was involved in the hit and run accident on Tuesday.

Do you think that since the driver has been identified the public should have some knowledge of the individual - picture, name, etc?

Desperate people will do desperate things.

Walk About, Chapter Ten

Darlene Franklin-Campbell's new novel, Walk About, is being posted online chapter-by-chapter, for people to read for free. Previous Chapter: Walk About, Chapter Nine, or start at the beginning: Walk About: Chapter One.

Chapter Ten

By Darlene Franklin-Campbell

Ace drank a soda as she watched others play and waited her turn. Rosie, still holding on to the man in the tight T-shirt drifted over to her, chewing gum, and popping bubbles. "Hey, Sugar," she said to the man on her arm, "Would you care to buy a poor girl a drink while I talk to my tightly-wound sister here?"

"All right," he said. He winked at Ace. "Loosen up, Babe. I'll take it easy on you. I promise."

"What's your name?" Ace asked. "I need to remember it so I can inscribe it on your tombstone when I bury you."

SB33 would offer 2nd chance after enhanced misdemeanors

By Nancy Royden, LRC

Frankfort, KY - Sometimes second chances are hard to come by. Senate Bill 33 would make it possible for people convicted of enhanceable misdemeanors to clear their records if they have remained law-abiding for a long enough time.

Right now, Kentucky law allows expungement of many misdemeanors as long as the offense was not a sex crime or an offense committed against a child. However, about 180 misdemeanors are not eligible if they can be enhanced by a subsequent offense, and the enhancement period does not expire.

Senate Bill 33, sponsored by Sen. Jimmy Higdon, R-Lebanon, would change that. It would amend state statute to allow expungement for enhanceable misdemeanors after a period of five to ten years, depending on the crime. The bill was approved on the Senate floor with a 32-4 vote on Wednesday.

Letter: Big snow led to grand adventure

Billy Joe Fudge writes:

Concerning that January 22nd, '63 snow, I was 11 years old. Highway 768 was completely blocked for a number of days from the top of the hill above our dairy barn much of the way out toward Chance. Hwy 768 saw a state road grader two or three days after the snow make its way from Ms Wheeler's store to a huge, fence post topper drift at the curve where Peg Shaffer's driveway is today. The grader driver could not push his way through and slid down through the fence into our field and left the grader overnight.

The next morning, another grader was brought in to pull the first one out and tore out another section of our fence before finally freeing the first grader and making a way through the drift. I remember walking the mile from our house to Ms. Wheeler's store to pick up a few items that we could have done without but Mom and Dad allowed me the opportunity for a grand adventure to save us all from starvation. At least that is the way it played out in my mind at that time! Ahhh, "precious memories, how they linger, how they ever flood my soul..."

Precious metals scheme targets elderly

Investors were advised to liquidate their holdings at registered investment firms to buy precious metals, bullion, and bullion coins through self-directed individual retirement accounts.

By Laura Clewett

Frankfort, KY - The Kentucky Department of Financial Institutions (DFI) announced on Thursday that it has joined the Commodity Futures Trading Commission (CFTC) and 26 other states in a coordinated enforcement action. The agencies acted to stop a fraudulent precious metals scheme targeting elderly investors. Nationwide, at least 450 people invested more than $68 million in the scheme.

"Nine Kentuckians lost $616,248 to this scheme, including at least four retirees," said Gov. Andy Beshear. "The victims thought they were investing their retirement funds to provide for future needs. In reality, they were caught up in yet another investment fraud, which have increased significantly during the pandemic."

DFI, CFTC and other state securities regulators filed a complaint in the U.S. District Court for the Central District of California alleging Safeguard Metals LLC and Jeffrey Santulan, also known as Jeffrey Hill, solicited investors nationwide by touting precious metals at grossly inflated prices that were not disclosed.
