Phillip Coffey - Hogs and Lard

By Phillip Coffey
No good, hot sausage can be found anymore.
All of them lean pigs - no fattening hogs to 'ground'
In earlier days - fat hogs grown for lard making.
Eyes mostly hidden - heads always well rounded.

Cholesterol numbers higher - nearing the ceiling.
Sausage made with red pepper, sage, lots of fat filling
Neighbors all pitching in - weather always so chilling.
Together raising our pigs then hogs we be killing.
