Carl Oneil Coffey, Jr., of Columbia passed away on Monday, November 30, 2020, at Jewish Hospital in Louisville. He was 75 years old.

Cremation has been chosen, and a private burial will be in Columbia Cemetery.

Gov. Beshear: More than 4,000 new COVID-19 cases

Record new cases, deaths, cases in children, hospitalizations, number of Kentuckians in the ICU, number of Kentuckians on ventilators; highest positivity rate since May

Frankfort, KY - Today, Gov. Andy Beshear announced the state's worst ever COVID-19 report by virtually every measure. He reported more than 4,000 new cases and 35 new deaths. Nearly 250 Kentuckians are fighting for their lives on ventilators.

"There's no way to sugarcoat it. Today is the very worst day we have had for reporting on the spread of the coronavirus and it is the deadliest day that we have had," said Gov. Beshear. "This is exponential growth. If we don't all do our part, if we try to be the exception, then slowing down this thing won't work and we will lose a lot more Kentuckians we love and care about."

LWC Women's Basketball's schedule adjusted this week

Lindsey Wilson women's basketball's schedule this week has been adjusted, LWC athletics director Willis Pooler announced today.

The Blue Raiders (6-1) were scheduled to host Thomas More (KY) and Shawnee State (OH) this week, but due to COVID protocols, both games have been postponed. Mid-South Conference officials will announce the rescheduled dates for both games at a later date.

Despite the postponements, Lindsey Wilson will not be idle this week.

Open Enrollment continues through Dec. 15, 2020

Frankfort, KY - Open Enrollment for 2021 Marketplace health insurance plans at HealthCare.gov is continuing. The Kentucky Health Benefit Exchange (KHBE), within the Cabinet for Health and Family Services (CHFS), is working to ensure Kentuckians are prepared, informed and have the resources they need to choose a 2021 health plan.

This year's open enrollment continues through Dec. 15, 2020 for coverage that starts Jan. 1, 2021. Kentuckians who were enrolled through the Marketplace for 2020 and who do not want to make changes to their plans will be automatically re-enrolled. However, everyone is encouraged to check the status of their enrollment and selected coverage options. In many cases, policyholders will have the same plan for 2021 or their coverage will move from their current plan to an available 2021 option that most closely matches their current coverage.

CHFS is using a grassroots campaign to reach current policyholders and potential new enrollees. Targeted efforts include direct mail, emails and phone calls. Additionally, KHBE is coordinating with community-based kynectors who service every county in the Commonwealth and is collaborating on virtual events designed to educate the public and assist with applying for coverage. KSP: Post 15 to conduct safety traffic checkpoints

Kentucky State Police Post 15 will be conducting periodic traffic safety checkpoints in the Post 15 area, which includes Washington, Marion, Taylor, Green, Casey, Russell, Adair, Metcalfe, Monroe, Clinton, and Cumberland counties.

These checkpoints will be conducted as part of Post 15's highway safety efforts. Troopers will be checking for violations of Kentucky traffic and regulatory laws relating to motor vehicle equipment safety, licensing of drivers, motor vehicle registration, and operation of motor vehicle while under the influence of intoxicants.

Black Cake recipes from the early 1900s

Recipes were a little less thorough around the turn of the turn of the last century, but there seems to be enough information for a good start. If any readers attempt these recipes, we'd love a photo of the results. --Pen

The earliest mention I found of "black cake" in the Adair County News appeared in the summer of 1902, when the Fair offered a one dollar premium for the best entry in that category. (Mrs. Claud Hurt won the prize.)

In the process of plundering through the old papers, I found two recipes for this delicacy. The one headlined simply "Black Cake" comes from the September 14, 1910 edition. The other one saw publication in the July 18, 1922 paper.

Black Cake, September 14, 1910

Beat one cupful butter to a cream, add one cupful sugar, beat until very light, then add one cupful molasses and after mixing thoroughly add four cupfuls of flour in which sift one-half teaspoonful soda, one-half teaspoonful cinnamon, one-quarter of a nutmeg grated, one-half teaspoonful cloves, one cupful each of dried currants and seeded raisins and one cupful of strong coffee. After blending thoroughly, add the stiffly beaten whites of the eggs. Bake in a paper lined tin, greasing the paper. It will take two hours in a modern oven to bake this cake. When cold cover with yellow icing put on roughly and decorated with strips of citron cut to represent sheaves of wheat, a bit of icing placed about the sheaves to represent the strings holding them together.

Dear friends, you can dry the peppers from this plant and place them in a small bottle then added hot apple cinder vinegar and let it age for 3 month. This will make a good hot sauce for soup beans or chili.

Kefir bread recipe - no need to knead

Thought I would share my Kefir bread recipe. I've had the same Kiefer grains for over a decade. They grow - you can share them, you can eat them. They are available on different websites if you want to just search Kefir grains.

As long as you keep them fed well with milk, they will live forever and continue to grow. Like yogurt on steroids :-)

I also make Kefir cheese, cottage cheese, then use the whey that is left over to ferment veggies. To make the cheese simply take a large coffee filter in a strainer over a large glass bowl pour the Kefir in there let sit till thickness desired, take whey put in fridge.

Hello, Greetings from Spain. I am writing to let you know about a new book written by a Knifley native.

Some years ago I collaborated with Mr. Richard Hovious, who then had a rough draft of his autobiographical memoir. At the time, he mentioned corresponding with Ed Waggener of Columbia Magazine, and how much he had enjoyed seeing his submissions there, especially the "Where Are They Now?" feature you posted. I remember he wanted to send a release to Mr. Waggener when the book was published, but I infer from your web site that he passed away.

Mr. Hovious also passed away, last year, and unfortunately I had somewhat lost touch with him by then, but I know he would be very happy that his memoir is finally being read, especially at his home place. In old age he was very nostalgic for the Knifley of his boyhood and the book includes many, many reminiscences of Knifley people and anecdotes involving them, and himself, during the 1930s and 1940s, both in the first part of the text and in an appendix at the end.

Marsha Sue Smith-Hamilton, 73, of Campbellsville, KY (1947-2020)

Marsha Sue Smith-Hamilton of Campbellsville passed away on November 29th, 2020, at the Taylor Regional Hospital. She was 73 years old.

Cremation was chosen by the family. All services will be held privately at a later date by the family.

LCDHD: Possible plateau in cases

LCDHD COVID-19 Public Information Brief 11/30/2020

So far this week we have added 362 new cases compared with 402 last week. Also, we have 18 fewer active cases this week compared to this time last week. Even if this is beginning to suggest a new plateau, remember, deaths and hospitalizations will not likely start decreasing for about 3 to 4 weeks. So, it is not surprising our numbers of deaths and hospitalizations remain very high.

I know the restrictions are painful, but hopefully the slightly lower new and active cases compared to this time last week means that what we are doing now is beginning to work. This is not a time to let up. It is time for everyone in our communities to double-down on our efforts. Please, let's all do our part in slowing the spread of COVID-19 by wearing our face coverings, avoiding crowds (especially in confined spaces), social distancing when around others, increasing our hand hygiene, increasing our general sanitation, and by avoiding the touching of our faces.

Successful 2020 Hunting Season at the Red Lick Ranch

We were very pleased to have three generations of the Lagermann family have a successful hunt this year at the Red Lick Ranch, Metcalfe County KY.
  • Bill Lagermann got a nice 8-point buck.
  • Bill and Chris's son Michael got a 7-point buck and also a doe he donated to the Kentucky Hunters for the Hungry.
  • Son Steve Lagermann got a 5-point buck.
  • Granddaughter Rachel (age 15) daughter of Mike and Lynn Lagermann, Mount Washington KY got a 9-point buck on her FIRST hunting trip.
  • Grandson Peter Lagermann (age 10) son of Steve and Sarah Lagermann, Bowling Green KY got a nice doe that he donated to the Kentucky Hunters for the Hungry. This was Peter's first time hunting!
