Epicurean Kentuckian: Kimchi Salad



2014-12-11 - Photo by Pen. Classic kimchi is fermented, but some of the best kimchi is meant to be eaten almost immediately, like this mixture of radishes, cucumber and spinach, with green onion, fresh ginger, and cilantro. The dressing is rice wine vinegar, sugar, and salt, with a little paprika and cayenne for color and flavor.
