Epicurean Kentuckian: Chili Supper - food for the weather

Shirley Gibson, in her traditional role as Chili Chef, prepared this special Chili to order plate for the EK food critic. The chili is rich, hearty with ground beef, pinto beans, and just enough chili powder, chili and cumin in the tomato broth for a mildly spicy creation. The recipe is a time honored tradition at Fire Department suppers. It's been dubbed "Caffay Shirlay" in the chef's honors. Brenda Harvey made the brownies; the pumpkin cookies are store-bought. The plate above, we were told, is for lefties - special people tonight. But of course they plate up for regular people, too. - EK
