According to some entries found Googling, the flowers are eaten as vegetables, as in this item at Banana Flowers/Molly Watson on About.com. The Adair County Garden Club has members with a great knowledge of edible flowers. A Day Lily sample was a hit at the "Cooking with Herbs," class a few weeks ago. - CM.
