Epicurean Kentuckian: Roasted Zucchini Salad

2013-02-27 - Photo by Pen. Salad is not usually on top of winter menus, but adding warm vegetables can be just the ticket. Garlic and olive oil turn zucchini into welcoming comfort food, and sauteing with red pepper and oregano, they make for hearty and healthy fare on top of any fresh greens. Salty Feta cheese plays really well with the sweet sauteed red peppers.
