Epicurean Kentuckian: Fried Rice



2013-02-22 - Photo by Pen. One of the most sublime secrets in all of cooking is to let a slightly undercooked egg incorporate into a hot dish of noodles or rice. Eggs or egg yolks finish cooking in the dish to form the custardy basis for the Italian classic Spaghetti Carbonara, a Korean Bi Bim Bap, or here, a really delicious lunch of fried rice made from whatever rice and vegetables are left in the refrigerator, plus generous amounts of garlic, sesame oil, and Sriracha sauce.
