2013-01-19 - Fortune Street, Columbia, KY - Photo by Ed Waggener. Gentle Green Soup is a minor twist on avocado soup. It's simple, quick, and and tasty. This serving for one was made with one avocado, sauteed and mashed with a fork, vegetable broth to desired thickness, a dollop or two of half and half, salt to taste, and olive oil The topping is diced cucumber, cilantro, carrot, and red sweet pepper. Most of the topping was for color, which the cucumber doesn't have, but the cucumber is the perfect taste complement. The edible spoon was pretty okay. - EW
