2013-01-12 - 730 Southfork Road, Liberty, Casey County, KY. - Photo CM photo. A classic Oregonian/Kentuckian Hashbrown soup is served from the sophisticated kitchen at the the Wagon Trail Restaurant, South Fork Road, Casey County, KY. Hearty and filling, al fresco, on a summery winter day, January 11, 2013. It's called Hashbrown Soup, Amy Sizemore said. It's served with buttered garlic bread, with chopped onion garnish. Mrs. Sizemore's family, the Doyles, are a coal mining family from Harlan County. Mr. Sizemore, her husband doesn't claim any Kentucky background, though the name shouts it. Rating: The Best Oregonian-Kentuckian Hashbrown Soup in the region. - EK
