Epicurean Kentuckian: Pastel Tres a Leche strikes Columbia



2012-05-25 - 104 Public Square, Columbia, KY - Photo by Ed Waggener. Pastel de tres leches is the latest dessert offering at Pablo's Mexican Grill, 104 Public Square, Columbia, KY. Tres leches is "three milks" in Spanish. The dish is usually made with evaporated milk, condensed milk, and heavy cream. It's a soaked white sponge cake topped with whipped cream and and a fancy glaze. There's a little stylized Mexican flag for decoration. It's a current featured dessert, while the proprietors weather the 'no flan' dessert controversy engulfing the establishment. Perhaps, this visually more exciting dessert will quell the outcry, and there's no worry about being drunk on anything but happiness. It's as moist as rumcake; it's 0 proof. -Ed Waggener
