Epicurean Kentuckian: The best Chimichanga, Best Pico

2012-06-15 - 104 Public Square, Columbia, KY - Photo by Ed Waggener. A Thursday specially priced item, a beautiful presentation is served at Pablo's Mexican Grill, 104 Public Square, by the Fountain, in Downtown Columbia, KY. This one is a stuffed with beef awaiting added intensity, to taste, of red or green habernero sauce and is served with generous portions of refried beans, Mexican rice, guacamole on a fresh cut bed of lettuce, sour cream, and on this occasion, the best Pico de Gallo ever - it was loaded with Jalapeno chips.

Towering Tree, zooming in

2012-06-15 - From Veterans Bypass, Columbia, KY - Photo by Ed Waggener. Here's a closer look at Mrs. Marcum's: Well, would you look at that tree. See also: Why? The towering tree seen from Veterans Bypass? The tree in fact does have a coincidental significance: It points to Paradise - Paradise Lane - a little bit of secluded heaven right here in Adair County.

Why? The towering tree seen from Veterans Bypass?

2012-06-15 - From Veterans Bypass, Columbia, KY - Photo by Ed Waggener.
It's a single tree above all the rest and can be seen even more distinctly going north on Greensburg Street, alongside Sherman and Sherman Wayne's recycling center. It's the high jut in the skyline at the top center of the picture. The photo above was taken from the Adair County Veterans Memorial Bypass, looking across Downey's Mill, across Petty's Fork and the Graves Farm, and I don't know what all else to what looks like Lampton Lane, but we've never found exactly which tree it is there. Mrs. Marcum, who must have one of those Billy Joe Fudge genes for seeing the difference everytime, always is the first to say, "Well. look at that tree ahead." Despite the immodest display by this one, it is not the only one in the world to tower above everything else - nor could it be the most famous. On KY 55, going north down Muldraugh Hill in Marion County, into one of America's most pleasing scenes, Mrs. Marcum - still my favorite mother-in-law/author in the world - always says, "Well, would you look at that tree ahead." There's one a little to windshield left which just pops out at everyone, towering in the most grand, smart alecky way, saying, 'Well look at me,' and everyone does. And everyone watches for why this one tree, has such a prominence on the horizon, and then, reaching where it looks like it is, can never figure out just which tree it is." It's a wonder and a question for all the wisdom of the ages - or just one Billy Joe Fudge - to explain it. -EW See also: Towering Tree, zooming in
