Epicurean Kentuckian: Jerk Chicken


2014-05-28 - Photo by Pen. Jamaican style jerk chicken is great on the grill when the weather turns hot. A good jerk relies heavily on allspice, scallions, and hot peppers, with garlic and sometimes fresh ginger and lots of other spices. Here the chicken is served with greens, kidney beans and rice. Red Stripe is the traditional favorite beverage to accompany, but a hipster-local Kolsch was all we had handy.

Wildflowers: Spring air sweeter now

Scenic Adair Co., KY: Horses in the mist


2014-05-28 - Roseland Plantation, Hurt Street, Columbia, KY - Photo CM Staff Photo. Three very happy, eager to meet the misty morning are now domiciled at Roseland Plantation, adjoining Hurt Street and E Guardian and seen here from Fortune greeted early risers this morning. Not properly introduced to all three, but the blaze, chestnut on the right is "Rosie." Quite the character according to owner, plantation overseer, and horseman Johnny Arnold. She's become known as "Nosey Rosie," because she's curious about everything going on in her surroundings. When new planking went on one side of the barn, Rosie was right there - hard to get out of the way. But she abides no curiosity from others, and is giving to nipping those who try to get too familiar and break her space. She's pretty, and every bit a lady. No touching, thank you very much. - EW
