Epicurean Kentuckian: Moonstruck Egg
2016-01-17 - Columbia, KY - Photo by Ed Waggener. KET's featured movie last night was "Moonstruck." We watched it all the way through for just the 310th time, and were so inspired by Olympia Dukakis' breakfast eggs, we paid homage to the show with these wannabe Moonstruck eggs. Noticed other recipes for Moonstruck Eggs call for roasted red pepper, so hope we got this right. The great thing about the dish is simplicity. Takes less than 10 minutes start to finish. - EW
