Daytrip to Rockhouse Bottom: From Creelsboro Arch - West 2016-04-10 - Rockhouse Bottom, Creelsboro, Russell Co., KY - Photo by Pen . The view is spectacular from the trail at the top of the arch. The view of the Cumberland River, as it flows west toward Burkesville - is spectacular, but not for anyone the least acrophobic or foolhardy enough to get to close to the cliff's edge. Epicurean Kentuckian: Geniece's Near Perfect, Slow cooked toast 2016-04-10 - Columbia, KY - Photo by Ed Waggener, CM. Geniece Marcum, a great cook, is most persnickety about her toast, and insists that no meal is fit unless it is at least one course, the only course, or dessert. Linda and I had always waited meals until this ritual was performed. Following a trend - for better or for worse - to review each meal at some point, more often than not the best part of the meal would be the toast. The secret is patience for it to crisp up around the edges, and lots of butter. This dish takes 5 minutes per one or two slices. It's not just any bread. Mrs. Marcum favors sourdough or rye, and has a particular brand she favors, and it is not just any spread, it's real butter. It doesn't come quickly produced from from a pop-up toaster; at our house no more than two-slices-at-a-time fit into the little oven. The timer is set for 5 minutes, and it may take a little longer if, as it usually is, carefully monitored at the conclusion. To borrow a phrase from Alan W.
