Epicurean Kentuckian: A pretty nearly fresh cut salad 2016-02-23 - Russell County, KY - Photo CM photo. A few places still serve them - "new" as opposed "used" salads. The ones with everything fresh cut right after the order is placed. Some diners, even today find preservatives off putting and notice the unwelcome sweet taste which is sign of decay which starts immediately after salads made more than hour before serving. Somewhere, in all likelihood, there is a supertaster who can take on bit and announce to the minute how long ago it was made. And get a sick feeling when the salad is shipped in from a factory. The salad above passed the taste, smell and visual test. If it came from a plant in Texas it was a pretty good imitation of a fresh cut salad.
