Epicurean Kentuckian: Catfish and Grits

The late Ed Waggener once referred to catfish as his "ideal last meal on earth or first in heaven." It's easy to imagine him collaborating with the cooks at the old Circle R to recreate this dish, likely at breakfast, and probably substituting "halloween peppers" for garnish instead of parsley and green onions.
