Tony Martens shares recipe for Elderflower Wine

Tony Martens writes:
Here is an old recipe for Elderflower wine.
  • Elderflowers - 1 pint (not pressed)
  • Sugar - 3 lbs
  • Raisins - 1/2 lb
    Or
  • White Grape Concentrate - 1/4 pint
  • Lemon Juice from 3 Lemons
  • Grape Tannin - 1 tsp
  • Wine Yeast -1 packet
  • Water - 1 gallon
Makes 1 Gallon of wine.

Gather the flowers when they are fully open, trim them from the stems until you have 1 pint.

Bring your water to a boil and pour over the flowers, add the sugar, chopped raisins or concentrate and lemon juice. Let cool (Room Temp.), add wine yeast grape tannin and nutrient. Cover and leave to ferment.

In a warm place for 4 - 5 days. Strain into a clean jar, fit with airlock and leave to ferment. When it clearsRack (siphon) wine off deposit for the first time, two (2) months later rack again. When wine is clear rack and bottle. Let wine age for a 6 months to 1 year for best flavor. If you cannot wait that long drink it now.Enjoy.
