Crook Chef Hollis Barnett of Varanese won the Cast-Iron Chef title at the Kentucky State Fair on Saturday, August 29, 2009, defeating five time winner, Robert Black of The Blue-Eyed Chef Catering. Barnett, a two time winner of the sought after culinary title, took the two mandated secret ingredients for the competition, a Kroger flank steak and corn on the cob, and transformed them into tender pan seared flank steak slices served alongside corn and fried asparagus tips with shallots, red wine vinegar, Dijon and capers. He added a side of creamy potatos with scallions to win the judges' final seal of approval. Barnett is an Adair Co., KY native. He is a Sullivan University Culinary Arts Program graduate. He worked at Porcini before meeting Chef John Varanese at Azalea's and joining him in 2007 at Varanese, 2106 Frankfort Avenue, Louisville, KY. This story was posted on 2009-08-31 11:32:44
