Tony Martens sends: Blackberry wine recipe

From Tony MartensHere is the blackberry wine receipe I promised you.

For 5 Gallons:
  • 14 to 18 lbs. Berries
  • 5 lb white sugar
  • 5 Camden tablets
  • 2 tsps. acid blend
  • 3 tsps. yeast nutrient
  • 1 packet wine yeast (Red pastur)
Crush berries to extract the juice, save the pulp. pour juice in a food grade plastic bucket. 6 gal or more. Place pulp in nylon mesh bag, add all the ingredients except yeast and mix in juice, add water to half way mark in bucket, put mesh bag with pulp in mix. Cover and let sit 24 hours. After 24 hours add yeast and place lid on bucket, insert air lock, leave sit for 5 to 7 days to ferment. Remove pulp and siphon to glass jug. Add water to bring to 5 gallon. Leave in glass jug for 15 days with airlock. After 15 days siphon off to leave sediment in bottom. Clean glass container and refill with wine. Add water to five gallon. Leave for 15 days with airlock installed. You may have to siphon the wine off 2-3 times to remove all sediment. It takes time and patience if you want a good wine.
