Food: Loves pat-pat-pat sound of papusas being made

About: Beef and Black Bean Pupusas with Yucca Fries

To the Epicurean Kentuckian at CM

Those look so yummy! I love pupusas, and the pat-pat-pat sound of them being made in kitchens. All the ones I've had are Salvadorian- I wonder if/how they differ from American Indian ones. Are these served with curtido (the vinegar-marinated cabbage/carrot/Mexican oregano) slaw-like condiment?

I should have taken notes, but the cafe was packed and I was hungry, so readers might be lucky there's even photographic evidence. I guess the word is out, because there was a healthy mix of locals and tourists when we were there. According to the Mitsitam Native Foods Cafe web site, the cafe offers food from the Western Hemisphere, and the papusas came from the South American station, and did include a beet and cabbage slaw and salsa roja. The Spring Menu 2009 (PDF) is available, and it's a good read for foodies.--Pen
