Dos Carnitas Tacos, Por Favor

Pen writes, "I'm glad to finally have a place nearby that makes proper tacos, with soft, warm, corn tortillas, and just cilantro and onion on top. Unfortunately, their version of 'carnitas' is just cubed and fried pork, not the lovingly braised and meltingly tender dish you can get at some restaurants."
