Circle R is coming back

2008-09-18 - Russell Road, Columbia, KY - Photo By Ed Waggener.
It started out to be a simple re-opening of the Circle R as a Restaurant. It's still that, but much more. The restaurant will re-open as a drive-through for catfish and seafood, and barbecue and homemade pies. At at the suggestion of the owner, Mike Stephens' parents, there will also be drive through breakfast items, including coffee and country ham and biscuits, in the morning. An 18 hole miniature golf course is now being constructed in Pennsylvania, and it will be set up behind the drive through. Mr. Stephens has expanded the grounds to include the old Hill Oil Company bulk plant grounds, so that the back lot now stretches from Community Trust Bank to the old Hannah Fowler House, an area behind AT&T and Lucky Day Cleaners. Above, center, Mr. Stephens, in white, and to his left Jason Stotts of Columbia landscaping go over landscape details, which now include a waterfall which will recycle through a pool stock with koi fish. In the background, Avalee Huddleston and his crew are working on the new roof. An exact opening date hasn't been announced for Columbia's version of Coney Island, but Mr. Stephens says that his aim is to be fully operational for the next tourist season, sometime in the spring of 2009.
