It's hog rendering time in Green Hills Cracklins are a bonus for Orby Yarberry, in addition to the tasty lard Orby Yarberry busied himself Thursday afternoon practicing an old time cooking experience outside his vegetable stand on Green Hills Road. The fire under the heavy cauldron kept him and a few onlookers warm enough to sit outside and keep the pot stirred. Yarberry says it takes two hours for about a 20 gallon kettle and says this is his second batch this year. He says its typically done when a hog is killed, he just chose to do it the old fashioned way. Another bonus to this method, besides the tasty cooking lard, are the cracklins, which can be eaten just about any way possible. In fact, Mrs. Yarberry made cracklin bread this morning!
