Kentucky Color: Who Knew

2024-08-11 - Great Wooded South - Photo by Billy Joe Fudge
Billy Joe writes, "Who knew that beans grow on trees? Well, they certainly do on Redbud trees like those along Jamestown Street from Office Park Drive to Gaston Avenue. More local species such as Northern and Southern Catalpas and Kentucky Coffee trees have seed pods but only the Redbud bean pods are edible. The pioneers were reported to roast Kentucky Coffee beans to make a coffee substitute drink."
