First crop of greens is a welcome sight

When spring arrives, it's time for fresh, crisp salads. If you grow a garden, you know that first crop of greens is a welcome sight. A small garden of lettuce and tomatoes is a great family project.

In today's world it's easy to grow up with a lack of understanding about the importance of growing food. An appreciation of our abundant, safe food supply, and the people who help produce it, can help your family develop a healthy relationship with food.


If you shop for greens at the local farmer's market, take some time to learn about the people who grew them.

Set your kitchen up for easy salad preparation by having a small, paring knife and a larger chopping blade with a handy cutting board.

To get the water off your greens after rinsing them, try a salad spinner. Kids will be amazed at the amount water in the bottom after you spin the basket.

While you and a family helper are chopping those greens, make some memories with a little good conversation.
