Knifley Fire Department Fish Fry had Best-We-Ever-Tasted Slaw (Click 'read more' to jump directly to the recipe and photos at the end of the story) The Knifley Fire House was the site of the Department's annual Fish Fry fund raising event on Saturday, May 28, 2005. A large crowd attended and enjoyed the excellent fish and homemade sides, including tempting desserts. Margaret Wethington, maker of the 'best-we-ever-tasted slaw' shared her recipe along with notes on the event to go with our photos. She says, "It's a big job and this year we had very little food left; a big thanks goes out to all who helped in any way." Fire fighters and support people included: Charlie and Margaret Wethington, David Giles and his wife Theresa and son Zach, Terri Drake and her daughters Carla and Chenoa, Penny Grimes,Martha Book, Fayline Streeval, Clariss Sears, Gayla Baker, Kenneth Humpress and Tom Fisher. Outside with the fryers were Jackie Perkins, Bill Bray, Brother Dave Book, Alan Grimes, Brett Farmer and Jason Upchurch, and explorer fire fighters Paul Bray and Derek Bray and Zach (they can get training and, when they reach 18, are certified.) Gayla Baker and Margaret Wethington ramrodded the meal and got supplies, Charlie Wethington was the cashier -- Kenneth Humpress is usually the cashier but he wasn't feeling real well and his wife had just gotten home from hospital. Terri Drake always makes the hush puppies and our flyers to be put up. Gayla and David bread the fish. Jackie is the main fryer. ------------- Margaret Wethington's Knifley Fire Department Fish Fry Slaw mix and let stand: 1 1/2 c sugar (stir to dissolve) 1/2 c vinegar 2 tsp salt some pepper (1 t or to taste) 1 tsp celery salt (I use celery seed) A dash of garlic salt Chop together: 1 1/2 medium head of cabbage 1 large mango or pepper 1 cup chopped celery (This recipe serves 20 and it will freeze good, up to 6 months) ---------- I used to help make this for our church in Indiana for our town's annual fish fry. We made 5-6 gallons of slaw, 10 gallons of potato salad, and 70 pies(this was a 2 night deal) and one church did all the baked beans for onenight and the other 3 churches in the community did things for the secondnight. I had made enough for 100 persons, or so I thought, we ran out right at the end. Glad the folks liked it and came back for seconds. This story was posted on 2005-06-05 09:56:24
