Letter: Question about edible sumacs Question re: Trees of KY: Sumac is beautiful edge tree Nancy Ison writes: "Is the winged sumac edible like the Staghorn Sumac?"Nancy - Thanks for writing. The earlier Columbia Magazine article by Billy Joe Fudge references the lemonade-type drink commonly made with Staghorn Sumac (Rhus typhina), but we found several references to the use of Rhus copallinum (Winged Sumac), in similar ways. An article on the uses of Winged Sumac: edibleplantproject.org Some have also recommended using the ripe berries of Winged Sumac as a substitue for Rhus coriaria, Sicilian Sumac, in the Middle Eastern spice blend Za'atar.
