Epilogue to Thanksgiving and Hog Killing George Rice finishes with the head and feet. Comments re article 71530 Reminiscing Thanksgiving and Hog Killing By George Rice After reading Billy Joe's comment it reminded me of what I had left out and that was the hog head and feet. In those days it was important not to waste any part of the hog. After the head was removed it must not be wasted so it was put back until all the rest of the hog was processed. Also the feet were saved. When the meat was processed it was time to work the head and feet which sometimes was the next day. The eyes was removes and the ears were next. The snout is removed and laid aside with the feet and ears. The remaining part of the head is now opened and the brains removed and saved also. The cheeks were carefully removed and made hog jowls which everyone loved. Now the feet, ears and snout was cooked and ground as Billy Joe mentioned and presses in a stone jar for a period of time which was then sliced and made delicious eating. There is still one part to be processed . . . the brains. They wee fried with scrambled eggs and made a delicious plate, or so they said.
