Yes, I've also been eating haloumi cheese, aka "grilling cheese." I slice it into strips about a quarter-inch thick, then put them in a cast-iron skillet heated with a thin coat of oil. It "grills" directly on the surface of the pan, and develops a golden, caramelized crust on the cheese itself.



Eaten with some prize-worthy heirloom tomatoes from my dad's garden that have been rubbed with a clove of garlic and a scattering of salt, it's so good that it brought tears to my eyes, and restored my faith in humanity!
