Food: Watermelon gazpacho is next on list About: It took a little salesmanship on watermelon-tomato salad To ColumbiaMagazine.com: I bet that salad was pretty tasty-I've been eating a ton of gazpacho this summer- both the traditional Spanish pureed style, and the chunky style, and have a watermelon gazpacho next on my list. It uses watermelon juice for the liquid, and diced onions, tomatoes, chiles and fresh herbs, etc added to that. Gazpacho has been my favorite meal to cool off with after a long day at work.
