Recipe shared on request- Ding Dong Cake

Harriett Gold writes, “Happy to share my recipe with everyone. Hope you love it as much as we do!"

Cake Ingredients
1 (18.25 ounce) box devil's food cake mix
1 (3.9 ounce) package instant chocolate pudding mix
4 eggs
1 and 1/4 cups water (use milk for a richer cake)
1/2 cup vegetable oil (use butter for a richer cake)


Directions:
1. Preheat oven to 350 degrees. Grease and flour two 8" pans or use parchment paper in the bottom.

2. In a large bowl, stir together the cake mix and instant pudding. Make a well in the center and pour in the eggs, oil and water. Mix until well blended. Spread evenly into the two pans.

3. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Cool cake on a wire rack before removing from pans.

4. Slice horizontally through the center of each layer. If I want a tall cake, I use all four layers, but sometimes I only use three.

Filling Ingredients
5 Tbsp all-purpose flour (1/4 c)
1 c whole milk
1-2 tsp vanilla
1 c room temperature butter
1 c granulated sugar (I use superfine sugar if I can find it)

Directions:
1. Whisk together the flour and milk. Cook over medium heat, stirring constantly until thick. Set aside to cool completely.

2. Once the flour and milk mixture has cooled, beat the butter, sugar and vanilla on high speed until light and fluffy. Add the milk mixture (it will be very thick) and continue to beat on high for four more minutes. Note: It takes a long time for the sugar to dissolve enough to not be grainy.

3. Spread filling between cake layers.

Note: You can make the milk mixture ahead of time and put in the refrigerator, but don't beat the butter and sugar together until you are ready to use it. If you make it ahead of time and try to re-whip it, it will separate.

Glaze
About one half can chocolate icing, not whipped)
About 1 tsp milk

Directions:
1. Heat icing about 10 seconds in the microwave and add 1 tsp milk. Stir to combine. Cover the top laver with this trosting, It will not de runny

2. Add a little more milk and heat a little more to make the remaining icing runny, Drizzle/smooth over top or cave and let it run cown the sides. Refrigerate.

Ding Dong Cake popular with the Gold family

Harriett Gold made this Ding Dong Cake to share with board members of the Adair County Hospital District at her husband Neal’s request. The group gathered for farewells as the office for the Adair County Hospital District was being closed out Wednesday evening. The cake is a great big version of the Hostess snack cake. It’s made with rich chocolate cake layered with a creamy filling. Everyone who tasted it gave it rave reviews and the popular recipe can be found on the Internet.
