What's on Your Thanksgiving menu? Crappie Patties

During our Day Trip to Arnolds Landing near Knifley, we came across Tim Marple, fishing guide on Green River Lake, who swears by having invented something even better than Crab Cakes -- he calls them Crappie Patties, made with a favorite fish easily found in the waters of Green River Lake, Crappie (pronounced in these parts kr-AH-pee). His recipe follows:



1 lb Crappie, chopped up fine
27 Ritz Crackers, pounded to dust
Half cup chopped green and red peppers
1/4 cup chopped onion
Dash hot sauce
2 eggs, slightly beaten

Mix all ingredients together, then chill in fridge 30 minutes.

Spray a tablespoon with oil and use it to dip and shape the mixture into small patties. Slide it from the spoon into hot grease to cook, or you can bake them at 400 degrees til browned. Text a photo if you try 'em, 270-403-0017.
